Yummy Cheese Rolls

My old roommate, Josette Clark, gave this recipe to me and I modified it to make them cheese rolls. My friends love these and ask me to make them every time I cook. They are so easy and cheap to make!

1 Tbsp. yeast
2 Tbsp. sugar
1 1/2 cups warm water
1/2 tsp. salt
3 1/2 cups flour
1 Tbsp. Butter
4-6 Cheese sticks
Garlic Salt (optional)

1.       Preheat oven to 375° F
2.       Stir yeast into warm water until dissolved. Mix together sugar, salt and flour. Add yeast mixture.
3.       Turn dough onto lightly floured surface. Knead very lightly and as little as possible until dough is no longer sticky.
4.       Let rise in warm place for 10-15 minutes.
5.       Cut the cheese sticks into thirds.
6.       Spray nonstick cooking spray onto cookie sheet.
7.       Take a chunk of dough (big enough for a roll) and place the cheese in the middle. Roll the dough into a ball, and make sure that the cheese remains in the center of the ball. Place ball on the cookie sheet, and repeat until the sheet is full.
8.       Melt butter and brush it over the rolls. Sprinkle with garlic salt or other herbs on top.
9.       Let dough rise for another 10-15 minutes or until it doubles in size.
10.   Bake for 15 minutes, or until rolls are a light brown.

*To make your rolls look more special, place the rolls in a casserole dish and sprinkle cheese over the rolls.
